WHY IS KIM’S GLUTEN FREE XANTHAN GUM-FREE FLOUR BLEND IN GRAMS AND NOT CUPS?

I developed my blends in grams because it’s so much more precise AND unbelievably easy to weigh ingredients than to measure by volume. My blends don’t translate very well to cups. I sure don’t have an 18th of a cup measurement, do you? I strongly suggest you invest in a scale (they’re very cheap) and weigh your ingredients–you’d be surprised at how easy it is and you’ll most likely never switch back.

ISN’T IT CHEAPER TO USE A STORE BOUGHT BLEND?

I feel my own blends work best in my recipes, and are also so much cheaper than spending a fortune on a tiny bag of gluten free flour at the store. HOWEVER, for the xanthan gum-free flour blend, using a store bought blend is an option if you only need a little bit. Please note that although this is an option, sometimes the store bought blends tend to be gritty so you may have a gritty texture to your finished gravy or sauce.

There are also some options for using cornstarch or arrowroot starch in place of the blend below. I personally have tried cornstarch instead of flour in pastry cream and it works great. But I prefer the thickening power of my xanthan gum-free blend over cornstarch in my gluten free sausage gravy.

I mainly use this blend when I don’t want something to become gummy, such as for gravies and cooked sauces, such as a bechamel.  I’m not sure of substitutes for this, but it’s so easy to make it’d be worth it to just make it yourself.  You’d rarely need more than 3 cups, unless you’re making sausage gravy for an army!!
