What more could you want on National S'Mores Day??? My take on a traditional s'mores--gluten free s'mores pizzelle sandwiches!! Thin and crispy graham cracker style pizzelle are stuffed with chocolate and toasted marshmallows.
110-oz bagmini or large marshmallows (your choice, but use large if grilling over an open flame)
Instructions
In bowl of stand mixer or in large bowl with handheld mixer, add eggs, sugars, and honey and molasses. Beat on high until lightened in color and thickened slightly, 2-3 minutes.
Turn speed down and slowly add melted butter and vanilla extract.
In small bowl, sift flour, baking powder, cinnamon, and salt. Fold into egg/sugar mixture.
Preheat pizzelle maker until green light comes on.
Using two spoons, scoop about two tablespoons of batter slightly to the back of center of each mold and slowly seal lid. Set a timer for about 50-60 seconds.
Remove from pizzelle maker with small offset spatula and allow to cool on counter. Pizzelle will harden once cooled.
If using chocolate fudge, in large Pyrex type measuring cup, add chocolate chips and sweetened condensed milk. Melt in microwave at 30-second intervals, stirring between, until mixture is smooth.
Spread about one tablespoon chocolate fudge onto one pizzelle. Top with marshmallows. Torch marshmallows using kitchen torch by placing pizzelle on metal or other heat-resistant surface. Top with second pizzelle and press slightly to adhere.
