I hope ya’ll had a fabulous week!! It went by pretty slow for me, which is unusual as the weeks normally fly by!
The Week In Review:
Yesterday was supposed to be the day Brandon graduated from boot camp. It was a little sad for all of us who are missing him and who were going to Great Lakes to see the graduation. It’ll happen eventually, but I was so looking forward to being there and seeing him and the whole ceremony.
I stopped by a new pizza place in our area, Mod Pizza, because I read they have gluten free pizza dough. I make my own and no store or restaurant can compare to it, but sometimes it’s the convenience that I need. I asked the girl behind the counter about their cross contamination practices (or lack thereof) and she said they use the same screens for both gluten free and regular pizza crust and bake it in the same oven. How ridiculous! Why bother selling gluten free crust if you’re not going to make it safe for those of us who HAVE to eat it? Yet another place I can mark off the list of all the places I can eat. I think there’s a total of 2 places that are safe in my area. Jeez 😒
Scott and I finally jumped on the bandwagon and started watching Game of Thrones. Haha! Took us long enough, huh? I truly didn’t think Scott would like it because he’s not into fantasy type stuff, but he surprised me and actually loves it! I love all the fantasy stuff anyway, so I knew I was gonna love it! So far we’re only on season 2 and I’m ready to strangle “King Joffrey!”
What I Posted This Week:
Gluten Free Triple Chocolate Cupcakes–for the chocolate lovers and the ones who think they aren’t chocolate lovers, these are the ultimate chocolate cupcakes, complete with these REAL chocolate flakes!!
That’s all I posted this week because I’ve been working on something really, really great and it takes all my concentration! It’s something ya’ll are gonna LOVE and I can’t wait to perfect it. I refuse to put it on the blog until I know it’s absolutely perfect and it’s just about there. Maybe another week or two and I can share. Fingers crossed 🤞
What I’m Loving This Week:
- This chimichurri sauce looks so good! I will make this some time when Scott isn’t here (he doesn’t like “herby” things).
- I’m loving all the different flavors of iced tea people come up with, like this Pineapple Ginger Iced Tea!
- These creamiest grits ever look JUST as creamy as the Tillamook Cheddar Cheese Grits at the Wave at Disney’s Contemporary Resort! I must make these pronto!!

What’s everyone doing for all the dads this weekend? We are celebrating at my mom and dad’s house and inviting Bre’s boyfriend’s parents as well. We’re having my cast iron skillet rib eyes (on the grill), baked sweet potatoes with butter and brown sugar cinnamon, and cold asparagus with lemon dill dip. Oh, and gluten free bread (either my artisan bread or Italian bread) with Kim’s Spread for Bread!! Dessert will be various flavors of cupcakes because all the dads like different things, haha!

And I can’t wait to try the triple chocolate cupcakes. I have been charged with making a GF cake/cupcakes for my nephew’s graduation as he also has celiacs. He requested chocolate so the timing is perfect.
