Sweet Saturdays: 04/20/19

Hi ya’ll! I decided to start doing Saturday posts recapping my week and what’s been going on here at Let Them Eat Gluten Free Cake. This is the first one of (hopefully) many. I always have the best intentions with things, but life sometimes gets in the way so we’ll see how it goes. I’m being cautiously optimistic 🙂

What’s Happened This Week:

My son, Brandon, left for Navy boot camp on Monday. As a mother, it was one of the hardest things I’ve ever done to watch him go. My mom and I were in tears! Growing up a Navy brat, I know how things go with the Navy and how you can often times be far, far away from family for long periods of time. At the same time, however, I am SO incredibly proud of him for making this decision for his future. He is such a smart and well liked kid that I know he’ll do well.

After taking the ASVAB (the military placement exam), Brandon scored high enough that he was offered to “go nuke.” He will be working on nuclear engines. There are apparently only about 50 candidates per year that “go nuke” so he’ll quickly advance in rank through this field and we are just beyond proud of him! As per usual Navy protocol, he didn’t know exactly when he was leaving until about a week beforehand. We didn’t have time to do a party like we originally had wanted to, so I threw together the “stars and stripes” cake above and we had a dinner for him at my mom and dad’s.

This week I got my luggage tags for my upcoming Disney trip!! Now it gets real. Whenever I see those luggage tags and then the magic bands, I know our Disney trip isn’t far away. Last December, my daughter graduated from college and as a graduation gift, I am taking her to Disney World, just the two of us!!! We couldn’t be more proud of her and her accomplishments (graduated with honors and summa cum laude–she is now a teacher!). So we thought the best way to show it is a trip to Disney 🙂 We are a HUGE Disney family (minus my husband–he doesn’t like it much) and Bre actually worked there through their college program. Stay tuned for gluten free food reviews from Disney because, if you don’t know Disney, it’s the BEST place to be if you’re gluten free!!

  1. Copycat Pizza Hut Pizza Sauce. This is so good, you won’t believe how much it tastes like Pizza Hut! It’s so easy to make, too.
  2. Gluten Free Focaccia Bread. If you haven’t made this yet, OMG, you should make it this week! It has a crunchy top and bottom crust and you’d never know it’s gluten free 🙂
  3. Gluten Free Magic Cookie Bars. Remember these from your childhood? Well, now they can be made gluten free, AND add Easter M&M’s and they’re the perfect Easter treat!

What are ya’ll doing for Easter? Our family almost always does brunch. Scott, unfortunately, will miss it as he’ll be traveling to South Carolina. I plan on making Belgian Waffles (haven’t found the recipe I’m using yet). My daughter will be making a fruit salad. (Alprazolam online) My dad is going to make eggs to order, bacon, and his famous hash browns (I love them!). I might make some rolls as well, but haven’t decided on that yet either. This year my mom is going to make a plastic wrap ball, a fun game we did last Christmas! Bre’s boyfriend’s mom and dad also invited me for Easter dinner. I’ll be bringing a gluten free apple bundt cake, which I plan on posting later this week.
