It’s sweet Saturday: 10/19/19. What a beautiful Saturday morning it is here in VB! Another week, another weekend.
I’m really loving this beautiful crisp fall weather (shhh, don’t tell summer, she’s still my favorite season). I have to say that walking in the fall is way better than walking in the summer. If I don’t get out the door before 7:00 a.m. in the summer, I’m sure to be dying from the heat and humidity.
I think Scott had about two good days of being home before he caught a bug of some sort and has been down for the count since. He’s pretty sure it was something he caught on the plane on the way home. Now I’ve caught a little bit of it myself and have been out of it for a few days. I did have my flu shot, so I think if it was the flu it’s not affecting me as bad. Thank God!! I’m hoping to be back to semi-normal today.
WHAT I’M LOVING THIS WEEK
When I started feeling like I was getting a cough, (and when I get a cough, I’m usually coughing horribly for 2-3 weeks), I immediately made this concoction that seriously really works!!
Mash two slightly overripe bananas and place in a small saucepan with 2 cups of water. Bring to a boil and reduce to a simmer, simmering for about 10 minutes. Remove from the heat and strain “banana water” through a sieve into a medium bowl or glass pitcher. Add about a tablespoon of honey (a little more or less to taste), a dash of cinnamon, and a dash of cayenne pepper. Mix and pour into mugs. Drink while still hot or warm.
I have a bunch of Granny Smith apples on my counter that really need to be eaten soon. Although I don’t use Granny Smith in my gluten free apple pies, these Instant Pot Cinnamon Apples are the perfect thing to make with them!!
I don’t have little kids anymore, but this Unicorn Popcorn is still right up my alley! I’ve always loved flavored sweet popcorn.
