I used to make all of my soups and gravies with cornstarch. I didn't think they were any different than if I had used regular flour. But I found out last Thanksgiving when I made my make ahead turkey gravy. I made it several days ahead and when the big day came, I needed to reheat it. It was gloppy and lumpy and it took several minutes of adding more stock and stirring vigorously to get it back to a smooth gravy.
When I first created this blog, along with my other flour blends I also created this one. But then time went on and I started using cornstarch for all my gravies and soups. So I decided to remove this flour blend. Well, I heard from some of you who wondered where it went. I'm happy to report that it's back and can be used in any of my soups and gravies with wonderful results!

How to make gluten free xanthan gum free flour
This is so easy, y'all, it's a matter of putting a container on a scale, weighing each ingredient into the container, putting the lid on and shaking it vigorously. That's all there is to it! You can scale it up or down for the amounts you'll need and keep it in an airtight container for several months.

Homemade blends are actually much cheaper than spending a fortune on a tiny bag of gluten free flour. Many store bought blends are very gritty due to them not using a superfine white or brown rice flour.
You can make most soups, stews, and gravies. I would not suggest using this flour blend to make cookies, cakes, breads and such. Without the xanthan gum, they won't hold together.

Ingredients
- 84 grams superfine white rice flour
- 35 grams potato starch
- 21 grams tapioca starch/flour
Instructions
- Mix the above ingredients together in an airtight container. Use in soups, stews, and gravies where a gummy texture is non desirable.

Im wondering if you have any suggestions for me. I have Celiac but I am also allergic to Psyllium husk! I desperately want to make GF sour dough but am unable to find a suitable substitute. Any ideas?
