Who remembers these little babies? Lil' smokies wrapped with a flaky pastry and baked to golden brown goodness? These were on every appetizer table at every party I think we had or went to back in the day. And they always seemed to be the first thing to disappear. Both kids and adults loved 'em.
I wanted to bring them back for a fun game day feast. Really, it'll be just me and my husband watching the Superbowl this year, but there's nothing wrong with making a few apps for us to munch on, right?!?! My mom and I used to make a full spread for just the two of us and my kids when they were too little to care.
Ingredients you'll need
- Gluten free puff pastry—you can use store bought, but I'd urge you to try my Easy Gluten Free Puff Pastry. It's SO easy to make and y'all, it is HEAVENLY! OR use my Gluten Free Crescent Roll Dough. It's JUST LIKE the one we remember from the can.
- Lil' smokies—these are just mini smoked sausages, but if you can't find them or don't want to use them, feel free to use hot dogs that have been cut into thirds. I've done it many times when the lil' smokies weren't available and they're just as good!
- Cheddar cheese—this isn't conventional, but I LOVE adding extra sharp cheddar cheese to my pigs in a blanket. It adds a little extra flavor and also a crunch factor that is irresistible (from the melted cheddar).
It's so easy to make pigs in a blanket!
- Step 1: Roll dough out into a rough 10 by 7 inch rectangle.
- Step 2: Brush with an egg wash and sprinkle with cheddar cheese. Press cheese lightly to adhere.
- Step 3: Cut into 18 small rectangles and top with sausages; roll up so that seam is on the bottom. Press lightly to adhere seam.
- Step 4: Place on baking sheet and freeze for 10 minutes. Brush with an egg wash and bake at 400 F for 15-20 minutes, or until puffed and golden brown. Serve warm or at room temperature with mustard sauce.

Yes, these can be assembled and frozen anywhere from one day to several months in advance. They can be baked from frozen as well, but if they are frozen longer than 10 minutes, add an additional 5-7 minutes to the baking time.
They are best served warm, but are also just as delicious at room temperature. To reheat, place in a 350F oven for 5-10 minutes.

Gluten Free Pigs in a Blanket
Ingredients
- 1 recipe Easy Gluten Free Puff Pastry (store bought gluten free puff pastry OR homemade gluten free crescent roll dough may be substituted)
- 4 oz (113g) extra sharp cheddar cheese, grated
- 1 14oz (397g) package Lil' Smokies (or equivalent amount in hot dogs cut into thirds)
- 1 large egg, whisked with one tablespoon of water and a dash of salt
- salt & pepper, sesame seeds, poppy seeds, or everything bagel seasoning for sprinkling, if desired
Instructions
- Remove pastry from refrigerator and cut off â…”. Rewrap the other â…“ and place back in the fridge for another use. Allow pastry to come to a cool room temperature before beginning. This will make it easier to roll out and prevent cracks.
- You can either roll the pastry on a well-floured surface (gf AP flour) into one large 14 by 20-inch rectangle, or cut it in half and roll each half into 7 by 10 inches. Sometimes it's easier to roll thin dough into two smaller sheets to avoid tearing (my preference).
- Brush pastry with the egg wash and sprinkle with cheddar cheese. Press the cheese lightly to adhere.
- Cut into 36 mini rectangles and place a lil smokie or piece of hot dog on one end of pastry. Roll up so that the seam is on the bottom. Press lightly to adhere seam to itself and place on parchment-lined baking sheets. Freeze while preheating the oven to 400°F.
- Brush with the egg wash and sprinkle with desired toppings, if desired. Bake for 12-15 minutes, or until golden brown. Serve warm or at room temperature.
