Here's what you'll need to make these scones
- Cranberries - I cut fresh cranberries in half, which I find disperses the cranberry flavor throughout instead of having large pockets of super tart cranberries. You can also use frozen (unthawed) cranberries that are whole.
- Buttermilk - I always use whole-fat buttermilk in any biscuit or scone recipe as it really makes a difference in the tenderness of the quick bread. However, if you can't find whole-fat buttermilk, you can use lowfat, but please don't substitute with fat free.
- Kim's gluten free all purpose flour blend - a store bought gf flour blend may be substituted, but please note this has not been tested.
- Butter - Cubed and cold butter is cut into the dry ingredients to make nice and tender, flaky scones.

- 2 cups (280g) Kim's gluten free all purpose flour blend (a store bought blend may be substituted, but hasn't been tested)
- โ cup (67g) sugar
- 1 tbsp (12g) baking powder
- 1 teaspoon baking soda
- ยพ teaspoon kosher salt
- 6 tbsp (85g) cold butter, cubed
- 1 cup (240g) buttermilk (preferably whole fat)
- 1ยฝ cups (143g) fresh or frozen cranberries, optionally cut in half if using fresh
Orange Honey Butter
- 1 cup (226g) butter, softened
- zest of one orange
- ยผ cup (85g) honey
Instructions
Make scones
- Preheat oven to 400ยฐF. Line a baking sheet with parchment paper and set aside.
- In a large bowl, whisk together the flour blend, baking powder, baking soda, and salt. Add the butter cubes and rub in with a pastry blender or your fingers until the texture of coarse crumbs.
- Add buttermilk and cranberries and stir until a stiff dough forms.
- Dump out onto a lightly floured surface and knead gently until smooth.
- Pat or roll into a round about 1 inch thick. Using a bench scraper or knife, cut into 8 equally-sized triangles.
- Space scones a couple of inches apart on prepared baking sheet. Brush with cream, if desired, and sprinkled with turbinado sugar.
- Bake for 17-20 minutes, or until puffed and golden brown.
